This creamy and comforting Chicken Alfredo Lasagna Soup combines the rich flavors of classic Alfredo sauce and lasagna in a hearty, easy-to-make soup perfect for cozy dinners.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 (15-ounce) can diced tomatoes, drained
  • 8 no-boil lasagna noodles, broken into pieces
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until no longer pink, about 5-7 minutes.
  2. Add garlic and onion to the pot and sauté until fragrant and translucent, about 2 minutes.
  3. Pour in chicken broth, heavy cream, and diced tomatoes. Stir to combine.
  4. Add broken lasagna noodles, dried basil, and oregano. Bring the mixture to a boil, then reduce heat and simmer until noodles are tender, about 10-12 minutes.
  5. Stir in Parmesan cheese and season with salt and black pepper to taste.
  6. Serve soup topped with shredded mozzarella cheese and fresh parsley garnish.

Notes

For extra richness, stir in a splash of white wine with the broth or add cooked Italian sausage alongside the chicken.
