  • 1 bay leaf
  • 2 cups egg noodles

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; sauté until vegetables soften, about 5 minutes.
  2. Add minced garlic and cook for another 1 minute until fragrant.
  3. Pour in chicken broth and add salt, pepper, thyme, and bay leaf. Bring to a gentle boil.
  4. Add chicken breasts to the pot, reduce heat to a simmer, and cook until chicken is fully cooked, about 15 minutes.
  5. Remove chicken breasts and shred them using two forks. Return shredded chicken to the pot.
  6. Add egg noodles and simmer until noodles are tender, about 7–8 minutes.
  7. Remove bay leaf, adjust seasoning if needed, and garnish with fresh parsley before serving.
