Cherry Blossom Cookies

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup cherry jam
  • 1/4 cup sliced almonds
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing about 2 inches apart.
  7. Make an indentation in the center of each ball using your thumb or the back of a spoon.
  8. Fill each indentation with about 1/2 teaspoon of cherry jam.
  9. Sprinkle sliced almonds over the top of each cookie.
  10. Bake for 12-15 minutes, or until the edges are lightly golden.
  11. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  12. Dust with powdered sugar if desired before serving.

Notes

For an extra floral touch, try adding a few drops of cherry blossom extract to the dough or use cranberry jam as a delicious alternative.
