Cheesy Veggie Crescent Bites Appetizer

These Cheesy Veggie Crescent Bites are a quick and easy appetizer or snack, perfect for using up leftover veggies. Flaky crescent dough is filled with a savory mixture of cheese and colorful vegetables, then baked until golden brown and bubbly.

  • 1 roll (8 ounces) refrigerated crescent roll dough
  • 1/2 cup finely chopped mixed vegetables (such as broccoli, carrots, bell peppers, and zucchini)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cream cheese, softened
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the chopped vegetables, cheddar cheese, cream cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix well until everything is evenly distributed.
  3. Unroll the crescent roll dough on a clean surface. Separate into 8 triangles.
  4. Spoon a generous tablespoon of the vegetable and cheese mixture onto the wide end of each triangle.
  5. Roll up each triangle from the wide end to the point.
  6. Place the crescent bites on the prepared baking sheet.
  7. Brush the tops of the crescent bites with the beaten egg.
  8. Bake for 12-15 minutes, or until golden brown.
  9. Let cool slightly before serving.

Notes

Serve warm with a side of marinara sauce or ranch dressing for dipping. You can also add cooked crumbled bacon or sausage to the filling for extra flavor.
