Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 4 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Caramelize the onions: Heat olive oil in a skillet over medium-low heat. Add sliced onions and cook, stirring occasionally, for 20-25 minutes, or until golden brown and caramelized. Season with salt and pepper.
  3. Prepare the chicken: Butterfly each chicken breast and pound to an even thickness (about 1/4 inch). Season with salt, pepper, and garlic powder.
  4. Assemble the rolls: In a bowl, combine softened cream cheese, mozzarella cheese, Parmesan cheese, and dried thyme.
  5. Spread the cheese mixture evenly over each chicken breast. Top with a generous portion of caramelized onions.
  6. Roll up each chicken breast tightly and secure with toothpicks.
  7. Bake: Place the chicken rolls in a baking dish. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  8. Rest and Serve: Let the chicken rolls rest for a few minutes before removing the toothpicks. Garnish with fresh parsley, if desired, and serve immediately.
