These Cheesy Rotel Sausage Balls are a crowd-pleasing appetizer perfect for any party or gathering. Made with just a few simple ingredients, they’re incredibly easy to make and bursting with flavor!

  • 1 pound ground sausage (I prefer hot)
  • 10 ounces sharp cheddar cheese, shredded
  • 10 ounces Monterey Jack cheese, shredded
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 cup all-purpose baking mix (such as Bisquick)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the ground sausage, cheddar cheese, Monterey Jack cheese, and Rotel.
  3. Add the baking mix and mix well until everything is evenly combined.
  4. Roll the mixture into 1-inch balls.
  5. Place the sausage balls on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, or until golden brown and cooked through.
  7. Let cool slightly before serving.
