This Cheesy Rotel Ranch Queso is a creamy, zesty dip combining melted cheeses, spicy Rotel tomatoes, and ranch seasoning—perfect for game days or gatherings.

  • 1 (10 oz) can Rotel diced tomatoes and green chilies, drained
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup sour cream
  • 1 packet ranch seasoning mix
  • 1/4 cup milk
  • 1 tablespoon butter
  • Optional: sliced jalapeños for garnish

Instructions

  1. In a medium skillet over medium heat, melt the butter.
  2. Add the softened cream cheese and stir until smooth and creamy.
  3. Mix in the shredded cheddar and Monterey Jack cheeses, stirring constantly until melted.
  4. Stir in the drained Rotel tomatoes and green chilies.
  5. Add sour cream, ranch seasoning mix, and milk; continue stirring until all ingredients are well combined and heated through.
  6. Adjust thickness by adding a little more milk if needed.
  7. Transfer to a serving bowl and garnish with sliced jalapeños if desired. Serve warm with tortilla chips.

Notes

For an extra kick, add a dash of hot sauce or chopped cooked chorizo. This queso also pairs well with fresh vegetables for dipping.
