  • 6 medium potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions, for garnish

Instructions

  1. Place the cubed potatoes and chicken broth in a large pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  2. In a separate saucepan, melt the butter over medium heat. Whisk in the flour until smooth. Gradually whisk in the milk until the mixture thickens.
  3. Reduce heat to low and stir in the cheddar cheese until melted and smooth.
  4. Pour the cheese sauce into the pot with the potatoes. Stir to combine.
  5. Season with salt and pepper.
  6. Simmer for another 5 minutes, stirring occasionally.
  7. Garnish with chopped green onions before serving.
