  • 1 egg, beaten
  • 1 cup breadcrumbs

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, and green onions. Season with salt and pepper.
  3. Form the potato mixture into small rolls, about 2 inches long.
  4. Dip each roll in the beaten egg, then roll in breadcrumbs to coat evenly.
