Cheesy Funeral Potatoes are a comforting baked casserole featuring creamy potatoes, melted cheese, and a crispy topping, perfect for family gatherings or potlucks.

  • 6 cups frozen hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup melted butter
  • 1/4 cup chopped onions
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups crushed cornflakes
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine hash browns, cheddar cheese, cream of chicken soup, sour cream, 1/4 cup melted butter, chopped onions, garlic powder, salt, and pepper.
  3. Transfer the mixture to a greased 9×13 inch baking dish.
  4. In a small bowl, mix crushed cornflakes with 2 tablespoons melted butter.
  5. Sprinkle the cornflake mixture evenly over the potato mixture.
  6. Bake uncovered for 45-50 minutes, or until the top is golden brown and the casserole is bubbly.
  7. Remove from oven and let cool for a few minutes before serving.

Notes

For extra flavor, try adding a cup of cooked and crumbled bacon or substitute the cheddar with pepper jack cheese for a spicy twist.
