A comforting casserole blending crispy hashbrowns with creamy cheese and a crunchy topping, perfect for family gatherings or potlucks.

Ingredients

  • 4 cups frozen shredded hashbrowns, thawed
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1/2 cup chopped onions
  • 1 cup crushed cornflakes or crushed potato chips
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine hashbrowns, cheddar cheese, cream of chicken soup, sour cream, melted butter, chopped onions, salt, and pepper. Mix until well blended.
  3. Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
  4. Sprinkle the crushed cornflakes or potato chips evenly over the top.
  5. Bake uncovered for 45 minutes or until the top is golden brown and the casserole is bubbly.
  6. Remove from oven and let cool slightly before serving.

Notes

For a vegetarian version, substitute the cream of chicken soup with cream of mushroom soup. Serve with a fresh green salad to balance the richness.
