  • 8 large eggs
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/2 pound breakfast sausage, cooked and crumbled
  • 4 cups cubed bread (day-old works best)
  • 1/2 cup chopped green bell pepper
  • 1/2 cup diced onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and red pepper flakes.
  3. Spread the bread cubes evenly in the prepared baking dish.
  4. Sprinkle the cooked sausage, green bell pepper, onion, and shredded cheddar cheese evenly over the bread cubes.
  5. Pour the egg mixture evenly over the layered ingredients in the dish, pressing down gently to soak the bread.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and the top is golden brown.
  8. Let it cool for 5 minutes before serving. Enjoy warm!

For a veggie boost, add chopped spinach or mushrooms. This casserole also reheats well for a quick next-day breakfast.
