A Bowl of Delicious Homemade Cheeseburger Soup

This comforting Cheeseburger Soup brings all the delicious flavors of your favorite burger into a warm and creamy bowl. Loaded with ground beef, cheese, and your favorite toppings, it’s a quick and easy weeknight meal.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup peeled and diced potatoes
  • 1 cup peeled and diced carrots
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Optional toppings: shredded lettuce, diced tomatoes, chopped pickles, cooked bacon, sour cream

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
  3. Pour in the beef broth and add the diced tomatoes, potatoes, carrots, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes and carrots are tender.
  4. Stir in the milk and cream cheese until the cream cheese is melted and the soup is smooth.
  5. Remove from heat and stir in the shredded cheddar cheese until melted.
  6. Serve hot, topped with your favorite cheeseburger toppings.

Notes

For a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce to the soup. You can also use ground turkey or chicken instead of ground beef.
