Freshly Baked Cheddar Zucchini Scones

These savory cheddar zucchini scones are a delicious and easy way to use up summer zucchini. Fluffy and cheesy, they’re perfect for breakfast, brunch, or a savory snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1 cup shredded zucchini, excess moisture squeezed out
  • 1 cup shredded sharp cheddar cheese
  • 3/4 cup buttermilk
  • 1 large egg, lightly beaten

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and pepper.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Stir in the shredded zucchini and cheddar cheese.
  5. In a separate bowl, whisk together the buttermilk and egg.
  6. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  7. Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick circle.
  8. Cut the circle into 8 wedges (scones).
  9. Place the scones on the prepared baking sheet.
  10. Bake for 18-20 minutes, or until golden brown.
  11. Let cool slightly before serving.

Notes

Serve warm with a dollop of cream cheese or a pat of butter. For extra flavor, add a pinch of red pepper flakes to the dough.
