Carrot Ginger Soup

This vibrant Carrot Ginger Soup blends sweet carrots with fresh ginger for a warming and healthy meal that’s perfect year-round.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 6 large carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 1/2 cup coconut milk (optional, for creaminess)
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Stir in garlic and grated ginger; cook for 1 more minute until fragrant.
  4. Add chopped carrots, vegetable broth, and ground cumin.
  5. Bring to a boil, then reduce heat and simmer for 25 minutes or until carrots are tender.
  6. Use an immersion blender to puree the soup until smooth. Alternatively, carefully blend in batches in a countertop blender.
  7. Stir in coconut milk if using, and season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley or cilantro.

Notes

For added warmth, sprinkle a pinch of cayenne pepper or drizzle with a little chili oil before serving.
