Cajun Scalloped Potatoes

A spicy twist on classic scalloped potatoes, featuring creamy layers seasoned with bold Cajun spices for a flavorful and comforting side dish.

  • 4 large russet potatoes, thinly sliced
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 2 green onions, thinly sliced (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Butter a 9×13-inch baking dish and set aside.
  2. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until lightly golden.
  3. Gradually whisk in the heavy cream and milk, stirring constantly until the sauce thickens, about 5 minutes.
  4. Remove the sauce from heat and stir in Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper.
  5. Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cream sauce over the potatoes, then sprinkle with half of the shredded cheddar cheese.
  6. Repeat with remaining potatoes, sauce, and cheese, ensuring the top layer is covered with cheese.
  7. Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 20 minutes, or until potatoes are tender and the top is golden and bubbly.
  8. Let the dish rest for 5-10 minutes before serving. Garnish with sliced green onions if desired.

Notes

For an extra kick, add a pinch of cayenne pepper to the sauce or serve alongside grilled sausage for a hearty meal.
