Cajun Potato Soup with Andouille Sausage

This hearty Cajun Potato Soup with spicy Andouille sausage combines creamy potatoes and bold spices for a comforting and flavorful meal perfect for any season.

  • 1 lb Andouille sausage, sliced
  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 2 green onions, sliced (for garnish)
  • Optional: shredded cheddar cheese for topping

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Andouille sausage slices and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same pot, add onion, celery, and green bell pepper. Sauté until softened, about 4-5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Stir in diced potatoes, Cajun seasoning, salt, and pepper.
  5. Pour in chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  6. Use an immersion blender to partially blend the soup, leaving some chunks for texture. Alternatively, blend half the soup in a blender and return to pot.
  7. Stir in heavy cream and cooked Andouille sausage. Heat through for 5 minutes, but do not boil.
  8. Adjust seasoning if needed. Serve hot, garnished with green onions and optional shredded cheddar cheese.

Notes

For extra richness, add a splash of smoked paprika or a dollop of sour cream when serving.
