Hearty Bowl of Cajun Potato Soup

Warm up with this creamy and comforting Cajun Potato Soup! Packed with flavorful spices, tender potatoes, and a hint of heat, it’s the perfect dish for a chilly day.

  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups chicken or vegetable broth
  • 2 pounds Yukon gold potatoes, peeled and cubed
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, sliced green onions, cooked bacon crumbles

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and green bell pepper and cook until softened, about 5-7 minutes.
  2. Add garlic, Cajun seasoning, smoked paprika, and cayenne pepper (if using) and cook for 1 minute more, until fragrant.
  3. Pour in chicken or vegetable broth and add potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Carefully transfer soup to a blender or use an immersion blender to blend until smooth.
  5. Return soup to the pot and stir in heavy cream. Season with salt and pepper to taste.
  6. Heat through gently, being careful not to boil.
  7. Serve hot, garnished with shredded cheddar cheese, sliced green onions, and cooked bacon crumbles, if desired.

Notes

For a richer flavor, use homemade chicken broth. You can also add cooked andouille sausage for extra protein and Cajun flair.
