Cajun Chicken Pasta

Delicious Bowl of Cajun Chicken Pasta

This creamy Cajun Chicken Pasta is packed with flavor and easy to make! Tender chicken and perfectly cooked pasta are tossed in a rich, spicy Cajun sauce for a satisfying meal.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 pound pasta (penne, fettuccine, or your favorite)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Season chicken with Cajun seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add bell peppers and onion to the skillet and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  4. Cook pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
  5. Add heavy cream and chicken broth to the skillet. Bring to a simmer and cook for 2-3 minutes, or until slightly thickened.
  6. Stir in Parmesan cheese until melted and smooth.
  7. Add cooked pasta and chicken to the skillet and toss to coat. If needed, add a little pasta water to adjust the sauce consistency.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, add a pinch of red pepper flakes to the sauce. Serve with a side of garlic bread for a complete meal!
