  • 1 (9-inch) baked pie crust
  • 1 cup packed light brown sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 1/2 cups milk
  • 4 large egg yolks, lightly beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • Pinch of sea salt for topping (optional)

Instructions

  1. In a medium saucepan, whisk together the brown sugar, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens, about 5-7 minutes.
  4. Remove from heat. Gradually whisk about 1/2 cup of the hot mixture into the egg yolks to temper them, then whisk the tempered yolks back into the saucepan.
  5. Return the saucepan to low heat and cook, stirring constantly, for 1 minute more.
  6. Remove from heat and stir in the butter and vanilla extract.
  7. Pour the butterscotch filling into the baked pie crust.
  8. Cover the pie with plastic wrap, pressing it directly onto the surface of the filling to prevent a skin from forming.
  9. Refrigerate for at least 3 hours, or until completely set.
  10. Before serving, garnish with a pinch of sea salt (optional).

Notes

For an extra decadent touch, top with whipped cream or a sprinkle of toffee bits before serving.
