  • 1 package (16 ounces) butternut squash gnocchi
  • 1 pound Italian sausage, removed from casing
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh sage
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package directions, usually 2-3 minutes, or until they float to the surface. Drain and set aside.
  2. While the gnocchi are cooking, heat the olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned.
  3. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Pour in the chicken broth and bring to a simmer. Cook for 2-3 minutes, or until the sauce has slightly thickened.
  5. Stir in the Parmesan cheese, butter, and sage. Season with salt and pepper to taste.
  6. Add the cooked gnocchi to the skillet and toss to coat with the sauce.
  7. Serve immediately, garnished with extra Parmesan cheese and fresh sage, if desired.

For an extra layer of flavor, try adding a splash of white wine to the sauce along with the chicken broth.
