  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1/2 cup mayonnaise
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 2 cups cooked broccoli florets
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/4 cup bread crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, whisk together cream of mushroom soup, milk, mayonnaise, onion powder, garlic powder, salt, and pepper.
  3. Stir in cooked rice, cooked broccoli, and 1 cup of shredded cheddar cheese.
  4. Pour mixture into a greased 9×13 inch baking dish.
  5. In a small bowl, combine bread crumbs and melted butter. Sprinkle over the casserole.
  6. Top with remaining 1/2 cup of cheddar cheese.
  7. Bake for 20-25 minutes, or until golden brown and bubbly.
  8. Let stand for 5-10 minutes before serving.

Notes

For a richer flavor, try using a combination of cheddar and Monterey Jack cheese. You can also add cooked ham or chicken for a heartier casserole.
