These easy breakfast muffins are packed with wholesome ingredients, making them a perfect on-the-go breakfast or snack. Customize them with your favorite fruits and nuts for a delicious and satisfying treat.

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ⅓ cup vegetable oil
  • 1 large egg
  • ⅔ cup milk
  • ½ cup blueberries (fresh or frozen)

Instructions

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, salt, and baking powder.
  3. In a separate bowl, whisk together vegetable oil, egg, and milk.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the blueberries.
  6. Fill each muffin liner about ⅔ full.
  7. Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, use melted butter instead of vegetable oil. You can also add a streusel topping before baking for extra sweetness and crunch.
