Hearty Breakfast Chili and Eggs

Start your day with a hearty and flavorful Breakfast Chili and Eggs. This protein-packed dish combines savory chili with perfectly cooked eggs for a satisfying morning meal.

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 pound ground beef or chorizo
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • Salt and pepper to taste
  • 2 large eggs
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Add ground beef or chorizo to the skillet and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Stir in chili powder, cumin, and smoked paprika. Cook for 1 minute, stirring constantly.
  4. Add diced tomatoes and kidney beans to the skillet. Season with salt and pepper to taste. Bring to a simmer and cook for 10-15 minutes, or until the chili has thickened slightly.
  5. Make two wells in the chili. Crack an egg into each well.
  6. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
  7. Serve immediately, topped with shredded cheese, sour cream, chopped cilantro, and avocado, if desired.

Notes

For a spicier chili, add a pinch of cayenne pepper or a dash of hot sauce. You can also use different types of beans, such as black beans or pinto beans.
