Blueberry Thyme Chicken

A juicy, tender chicken dish infused with fresh thyme and topped with a vibrant blueberry sauce, perfect for a flavorful weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 teaspoons fresh thyme leaves
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper, to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and half of the thyme leaves.
  2. Heat olive oil in a skillet over medium heat and cook chicken until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 1 minute until fragrant.
  4. Add blueberries, chicken broth, balsamic vinegar, honey, and remaining thyme leaves. Cook and stir occasionally until the blueberries burst and sauce thickens, about 5-7 minutes.
  5. Return chicken to the skillet and spoon the blueberry thyme sauce over the top. Cook for another 2 minutes to heat through.
  6. Serve chicken topped with the sauce and garnish with additional fresh thyme if desired.

Notes

For a richer sauce, add a pat of butter at the end of cooking. Serve with steamed vegetables or rice for a complete meal.
