Freshly Baked Blueberry Pie on a Rustic Table

This classic blueberry pie is bursting with sweet, juicy blueberries and encased in a flaky, golden crust. It’s the perfect dessert for any occasion, bringing a taste of summer to your table.

Ingredients

  • 6 cups fresh blueberries
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons lemon juice
  • 2 tablespoons butter, cut into small pieces
  • 1 box (14.1 ounces) refrigerated pie crusts
  • 1 large egg, beaten
  • 1 tablespoon milk
  • Coarse sugar, for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, gently toss together blueberries, sugar, flour, and lemon juice.
  3. Line a 9-inch pie plate with one pie crust.
  4. Pour blueberry mixture into the pie crust. Dot with butter pieces.
  5. Top with the second pie crust. Trim, seal, and crimp the edges. Cut vents in the top crust.
  6. In a small bowl, whisk together egg and milk. Brush the top crust with the egg wash.
  7. Sprinkle the top crust with coarse sugar.
  8. Bake for 50-60 minutes, or until crust is golden brown and filling is bubbly. If the crust is browning too quickly, cover the edges with foil.
  9. Let cool completely on a wire rack before serving.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra special treat.
