Blueberry Bagels

Delight in homemade blueberry bagels with a soft, chewy texture and bursts of fresh blueberries, perfect for breakfast or a snack.

  • 3 1/2 cups bread flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/4 cups warm water (110°F)
  • 2 tbsp sugar
  • 1 1/2 tsp salt
  • 3/4 cup fresh blueberries
  • 1 tbsp malt syrup or honey (for boiling water)

Instructions

  1. In a small bowl, dissolve sugar and yeast in warm water. Let sit for 5 minutes until foamy.
  2. In a large bowl, combine bread flour and salt. Make a well in the center and pour in the yeast mixture. Mix to form a dough.
  3. Knead dough on a lightly floured surface for about 10 minutes until smooth and elastic.
  4. Gently fold in the fresh blueberries, trying not to crush them.
  5. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place until doubled, about 1 hour.
  6. Divide dough into 8 equal pieces. Shape each into a ball, then poke a hole through the center to form a bagel shape.
  7. Preheat oven to 425°F (220°C). Bring a large pot of water to a boil and add malt syrup or honey.
  8. Boil bagels, 2-3 at a time, for 1 minute on each side. Remove with a slotted spoon and place on a baking sheet lined with parchment.
  9. Bake for 20-25 minutes until golden brown. Cool on a wire rack before serving.

Notes

For extra flavor, sprinkle coarse sugar or cinnamon on top before baking, or serve toasted with cream cheese.
