  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup blackberry puree
  • For Decoration:
  • Fresh blackberries
  • Edible silver leaf (optional)

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Dry Ingredients: In a medium bowl, whisk together flour, baking soda, and salt.
  3. Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Alternate Wet and Dry: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Add Blackberry and Cocoa: Stir in the blackberry puree, black cocoa powder, and black food coloring (if using).
  7. Bake: Pour batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool: Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  9. Make Frosting: In a large bowl, beat together the cream cheese and butter until smooth. Gradually add the powdered sugar, beating until light and fluffy. Stir in the vanilla extract and blackberry puree.
  10. Assemble: Once the cakes are completely cool, level them if necessary. Place one cake layer on a serving plate and spread with frosting. Top with the second cake layer and frost the entire cake.
  11. Decorate: Decorate with fresh blackberries and edible silver leaf (if using).
  12. Chill: Refrigerate the cake for at least 30 minutes before serving to allow the frosting to set.

Notes

For a more intense blackberry flavor, use blackberry extract in the frosting. Serve chilled for the best taste and texture.
