  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can chili beans, undrained
  • 1 (1 ounce) packet chili seasoning
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the onion, garlic, and bell peppers to the pot and cook until softened, about 5-7 minutes.
  3. Stir in the crushed tomatoes, tomato sauce, kidney beans, black beans, chili beans, chili seasoning, cumin, and smoked paprika. Season with salt and pepper to taste.
  4. Bring the chili to a simmer, then reduce the heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally. The longer it simmers, the more the flavors will meld together.
  5. Serve hot with your favorite toppings, such as shredded cheese, sour cream, and green onions.

Notes

For a spicier chili, add a pinch of cayenne pepper or a chopped jalapeño to the pot. You can also substitute ground turkey or ground chicken for the ground beef.
