Delicious Berry Cheesecake

This Berry Cheesecake recipe delivers a creamy, decadent dessert bursting with fresh berry flavor. A perfect treat for any occasion, it’s easier to make than you think!

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup berry jam or preserves

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. Bake crust for 8-10 minutes, then let cool slightly.
  4. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  5. Beat in vanilla extract.
  6. Add eggs one at a time, beating well after each addition.
  7. Stir in sour cream until just combined.
  8. Gently fold in 1 cup of mixed berries.
  9. Pour batter over cooled crust.
  10. Bake for 55-65 minutes, or until center is just slightly jiggly.
  11. Let cool completely in the oven with the door ajar.
  12. Refrigerate for at least 4 hours, or preferably overnight.
  13. Before serving, spread berry jam or preserves over the top of the cheesecake.
  14. Arrange remaining 1 cup of mixed berries on top.
  15. Slice and serve.

Notes

For a richer flavor, use full-fat cream cheese. You can also use different types of berries or a homemade berry sauce on top.
