beef vegetable soup

A hearty and wholesome beef vegetable soup bursting with tender beef chunks and fresh seasonal vegetables, perfect for a comforting meal any day.

  • 1 lb beef stew meat, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 medium potatoes, diced
  • 1 cup green beans, trimmed and cut
  • 1 cup corn kernels
  • 1 (14.5 oz) can diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove beef and set aside.
  2. In the same pot, sauté onion and garlic until softened, about 3-4 minutes.
  3. Add carrots, celery, and potatoes. Cook for another 5 minutes, stirring occasionally.
  4. Return beef to the pot, then add green beans, corn, diced tomatoes with juices, and beef broth.
  5. Stir in thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer, covered, for 1 to 1.5 hours until beef is tender.
  6. Adjust seasoning as needed. Garnish with fresh parsley before serving, if desired.

Notes

For extra richness, add a splash of Worcestershire sauce or a sprinkle of grated Parmesan before serving.
