  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips (for basketball details)
  • 1 pint vanilla ice cream, softened
  • Orange gel icing or melted orange candy melts
  • Black gel icing or melted dark chocolate for lines

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet, mixing until just combined.
  6. Fold in white chocolate chips.
  7. Drop tablespoon-sized scoops of dough onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 8-10 minutes or until edges are golden.
  9. Allow cookies to cool completely.
  10. Spread softened vanilla ice cream on the bottom side of one cookie and sandwich with another cookie to form sandwiches.
  11. Freeze sandwiches for at least 1 hour.
  12. Using orange gel icing or melted candy melts, pipe the base basketball color onto each sandwich.
  13. Once set, add basketball lines with black gel icing or melted dark chocolate to resemble a basketball pattern.
  14. Return to freezer until ready to serve.

Notes

For an extra fun twist, use chocolate ice cream or add a sprinkle of cinnamon to the cookie dough. Serving immediately after decorating keeps the details crisp and vibrant.
