A classic balsamic vinaigrette that’s tangy, slightly sweet, and perfect for fresh salads or roasted vegetables.

Ingredients

Scale
  • 1/4 cup balsamic vinegar
  • 3/4 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a small bowl or jar, combine balsamic vinegar, Dijon mustard, minced garlic, and honey.
  2. Slowly whisk in the olive oil until the dressing is well emulsified.
  3. Season with salt and freshly ground black pepper to taste.
  4. Adjust sweetness or acidity by adding more honey or vinegar if desired.
  5. Serve immediately or refrigerate in a sealed container for up to one week. Shake well before each use.

Notes

For a creamy variation, stir in 1 tablespoon of mayonnaise or Greek yogurt. This vinaigrette pairs excellently with mixed greens, grilled vegetables, or as a marinade for chicken.
