Delicious Bacon Cornbread Stuffing

This Bacon Cornbread Stuffing elevates traditional stuffing with savory bacon and the comforting sweetness of cornbread. It’s the perfect side dish for Thanksgiving or any holiday gathering.

Ingredients

  • 1 pound bacon, chopped
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 1 (14.5 ounce) can chicken broth
  • 1/2 cup butter, melted
  • 1 (15 ounce) package cornbread stuffing mix
  • 1 (8.5 ounce) package cornbread mix, prepared according to package directions and crumbled
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, cook bacon over medium heat until crisp. Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon grease in the skillet.
  3. Add onion and celery to the skillet and cook until softened, about 5-7 minutes.
  4. In a large bowl, combine chicken broth and melted butter.
  5. Add cornbread stuffing mix, crumbled cornbread, sage, thyme, pepper, cooked bacon, and cooked onion and celery to the bowl. Stir to combine.
  6. Add beaten eggs and mix well.
  7. Pour stuffing into a greased 9×13 inch baking dish.
  8. Bake for 30-35 minutes, or until golden brown and heated through.

Notes

For extra flavor, add dried cranberries or chopped pecans to the stuffing before baking.
