Avocado Pesto Zoodles

A creamy, refreshing avocado pesto sauce tossed with spiralized zucchini noodles for a healthy, low-carb Italian-inspired meal that’s quick to prepare.

Ingredients

  • 2 medium zucchinis, spiralized
  • 1 ripe avocado
  • 1 cup fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchinis into noodles and set aside.
  2. In a food processor, combine avocado, basil, garlic, pine nuts, Parmesan, and lemon juice. Blend until smooth.
  3. With the processor running, slowly add olive oil to create a creamy pesto sauce.
  4. Season the pesto with salt and pepper to taste.
  5. Toss the zucchini noodles with the avocado pesto until well coated.
  6. Serve immediately, garnished with extra pine nuts or Parmesan if desired.

Notes

For added protein, top with grilled chicken or toasted chickpeas. Serve chilled for a refreshing summer dish.
