Avocado Pasta Salad

This Avocado Pasta Salad is a creamy, fresh, and healthy dish perfect for quick lunches or potlucks, combining ripe avocado with tender pasta and crisp veggies.

  • 8 oz rotini pasta
  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a blender or food processor, combine the avocados, lime juice, olive oil, minced garlic, salt, and pepper. Blend until smooth and creamy.
  3. In a large bowl, combine the cooled pasta, cherry tomatoes, red onion, and cilantro.
  4. Pour the avocado dressing over the pasta mixture and toss gently until everything is evenly coated.
  5. Add red pepper flakes if you prefer a bit of heat, and adjust salt and pepper to taste.
  6. Refrigerate for at least 30 minutes before serving to let the flavors meld together.

Notes

For extra protein, add grilled chicken or chickpeas to make this salad even more filling.
