  • 2 cups cooked chicken breast, shredded or chopped
  • 1 large crisp apple, cored and diced
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 1/3 cup mayonnaise or Greek yogurt
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper, to taste
  • Mixed greens or lettuce leaves, for serving (optional)

Instructions

  1. In a large bowl, combine the cooked chicken, diced apple, walnuts, celery, and red onion.
  2. In a separate small bowl, whisk together the mayonnaise (or Greek yogurt), honey, Dijon mustard, lemon juice, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken mixture and gently toss to coat all ingredients evenly.
  4. Adjust seasoning with additional salt and pepper if needed.
  5. Serve chilled over a bed of mixed greens or lettuce leaves, if desired.

Notes

For a lighter version, substitute mayonnaise with Greek yogurt, and consider adding dried cranberries or raisins for a sweet twist.
