These apple cinnamon muffins are moist, flavorful, and perfect for a quick breakfast or afternoon snack. The combination of sweet apples and warm cinnamon creates a comforting treat that everyone will love.

  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup peeled and diced apples
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
  3. In a separate bowl, combine the vegetable oil, applesauce, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the diced apples and walnuts (if using).
  6. Fill each muffin liner about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, sprinkle the tops of the muffins with cinnamon sugar before baking. Serve warm or at room temperature.
