These Apple Cider Whoopie Pies are a delicious fall treat, featuring spiced cider cakes filled with a creamy maple buttercream. A perfect combination of warm autumn flavors in every bite!

  • For the Cakes:
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple cider, reduced to 1/2 cup
  • 1/2 cup buttermilk
  • For the Filling:
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Make the Cakes: Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. In a small bowl, whisk together reduced apple cider and buttermilk.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Drop rounded tablespoons of batter onto prepared baking sheets, leaving about 2 inches between each.
  7. Bake for 8-10 minutes, or until edges are lightly golden.
  8. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  9. Make the Filling: In a large bowl, cream together butter and powdered sugar until light and fluffy.
  10. Beat in maple syrup, vanilla extract, and salt until smooth.
  11. Assemble the Whoopie Pies: Spread a generous amount of maple buttercream filling onto the flat side of one cake. Top with another cake, flat side down, to form a sandwich.
  12. Repeat with remaining cakes and filling.
  13. Serve immediately or store in the refrigerator.

Notes

For an extra touch, dust the whoopie pies with powdered sugar before serving.
