Almond Cherry Cookies

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped almonds
  • 1/2 cup dried cherries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped almonds and dried cherries evenly.
  7. Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12–15 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra crunch, toast the almonds lightly before adding them to the dough or swap dried cherries with cranberries for a different fruity flavor.
